BROAD BEANS STIR FRY





Broad beans (also called Avarakkai in Tamil and Sem ki phalli in Urdu & Hindi) is a type of green beans that is rich in fibre, potassium and other vital nutrients. It can be used to make curries, stir fries, etc. This simple stir fry can be cooked in less than 15 minutes and tastes delicious.



Ingredients

¼ kilo Broad beans/Sem ki phalli/ Avarakkai
2 tsp urad dal
1 onion finely chopped
3 tbsp oil
Pinch of asafoetida powder
8 to 10 curry leaves
2 to 3 dried red chillies
½ tsp mustard seeds
½ tsp red chilli powder
½ tsp salt
¼ cup water

Method

Remove the fibrous string from the sides of the broad beans, wash well, and cut into 2 or 3 pieces. Then cut into finely chopped pieces using a knife or food processor. (Small pieces help in quick cooking.) 



Then heat oil in a pan, add mustard seeds, asafoetida, dried red chillies, urad dal and curry leaves. Next add onions and saute till they turn golden. 



Now add the finely chopped broad beans, red chilli powder and salt. Mix well and saute for a few minutes. Finally add water and bring to a boil. Close a lid and cook in medium flame for 5 minutes. 



Serve hot with plain rice or sambar rice.




Note:

Here we have used finely chopped broad beans, but you can also use large pieces of broad beans.In this case, you can add some more water and cook for 10 to 15 minutes. Alternately, you can pressure cook them first and then add to the stir fry.
