Broccoli is rich in Vitamin C, Vitamin A and dietary fibre. It is said that it also plays a role in reducing the risk of cancer and heart diseases. Hence this healthy and nutritious vegetable has started gaining prominence in India. In this stir fry recipe broccoli is mixed with boiled potatoes. You can serve
this as a side dish with rice and curry or with roti, chapathi or Naan.
Ingredients
2 cups broccoli cut into small florets
2 potatoes
3 tbsp oil
½ tsp mustard seeds
1 tsp cumin seeds
1 tsp fennel seeds
1 onion finely chopped
2 tomatoes deseeded and chopped
1 tbsp ginger garlic paste
½ tsp salt
1 ½ tsp pav bhaji masala
½ tsp chaat masala
Method
- Pressure cook or steam the potatoes for about 5 minutes with ¼ tsp salt and then coarsely mash them.
- Meanwhile boil water in a pan with ¼ tsp salt. Add the broccoli florets and cook for about 2 minutes. Drain the water and set aside. (You can skip this step if you want but this helps in cleaning off any worms that might have been present in the broccoli.)
- Heat oil in a pan, add mustard seeds and allow them to sputter. Then add cumin seeds, fennel seeds and stir fry for a few seconds.
- Next add onions and saute till golden.
- Add tomatoes and cook till it is soft and mash able.
- Now add ginger garlic paste and saute till the raw smell goes.
- Next add the broccoli and stir fry for a minute.
- Finally add potatoes, pav bhaji masala, chaat masala and salt. Mix well and cook for about 2 minutes.
- Serve hot.
