This is a very simple stir fry recipe that can be made quickly and requires very few ingredients. The stir fry can be stuffed in chapathis to make rolls or can be served as a side dish with rice and dal.
6 potatoes cut into small pieces
1 tomato thinly sliced and deseeded
3 tbsp oil
½ tsp mustard seeds
A handful curry leaves
¾ tbsp garlic paste
1 tsp red chilli powder
½ tsp turmeric powder
½ tsp salt
Method
- Heat oil in a pressure cooker, add mustard seeds, curry leaves and saute for a minute.
- Add garlic paste, and saute till the raw smell goes.
- Add red chilli powder, salt, turmeric powder and mix well.
- Add tomatoes and cook till oil starts separating.
- Now add potatoes and 2 to 3 cups of water and mix well.
- Pressure cook for about 10 minutes.
- The potatoes must be soft but must retain their shape.
- Serve the stir fry hot with chapathi or as a side dish with rice.
