Kathi rolls are basically chapathi rolls which have filling
inside. These rolls are ideal for breakfast, lunch or dinner as they are healthy, filling and fuss free.
Ingredients
4 chapathis
3 to
4 tbsp oil
1
onion thinly sliced
2
tsp ginger garlic paste
2
carrots chopped
1
capsicum chopped
4 to
5 beans chopped
2
eggs
1
tomato finely chopped
2
tsp pepper powder (or to taste)
Salt
to taste
Method
- Heat 2 tbsp oil in a pan.
- Whisk the eggs with 1/2 tsp of pepper powder and salt and add to the pan.
- Fry the eggs and when they are cooked, transfer to a plate.
- To the same pan, add the remaining oil and add onions. Cook till they turn golden.
- Then add the veggies and cook in high flame while stirring till the veggies are cooked.
- Add ginger garlic paste and sauté for a few seconds till the raw smell goes.
- Next add tomatoes and cook till they turn soft and oil starts separating.
- Finally add the eggs, salt and pepper powder and mix well.
- Check for taste, add salt or pepper if necessary.
- Take the chapathis and place the filling in the centre.
- Roll and serve hot.
